极为 pairs with bisyllabic adjectives, not monosyllabic ones like 好. Use 极为晴朗 or switch to the colloquial pattern 好极了.

我极为喜欢吃中国菜。(in casual conversation)
我特别喜欢吃中国菜。

极为 is too formal for casual conversation about food preferences. Use 特别, 非常, or 很 instead.
